Sandra the canoli shell is wrapped into a tube shape when it is baked, so it is hard enough to hold its tube shape, yet is is very delicate to handle. Not as hard as a ice cream waffle cone, its more the consistancy of a hard pie crust. Not a very good discription. The filling is a racotta cheese misture, with chocolote chips, cinnamon, pastachio nut chips. Probably some other things I;m not sure of. the tube is filled just before eating them, usually with the mixture injected into the tube filling the inside completly. Sometimes they put chocalote sause on them. If they are filled and you let them sit long, they tube absorb some moisture and soften a little.

We had found a bakery on the way out to our Daughters, she had told us about, where they made the best. Theirs were dipped in the chocolote hard shell on the ends. Too bad, they had to go out of business, with the economy. Its not an item you will find in a regular bakery. Usually only found in good italian deli or italian restraunts.

I'll ask my friend if Al Ventos had them, we went on a night
that they had a special menue and I didn't look at the desserts because
I couldn't have been fuller, but I'd love to go back to Al Ventos, it was
excellent food and the prices were very cheap for the dishes. I think
it averaged around 25 a plate. Hopefully they have cannolis cause I
want to go back there soon!!
