If it was me I would do the same thing adding in the potatoes etc. My daughter does her pot roast pretty much the same way but also uses a bottle of wine browning and in the crock pot. She also stressed to slow cook the meat alone, and not to add the other things, but do them separatly on the stove. I have to ask her why she does that, but it has something to do with how the meat ends up so tender. I'd probably just throw it all in one pot and let it cook togather.
